Lyon

Visiting Lyon is like taking a journey through time and space.

Hundreds of “traboules” – the famous Lyonnaise secret passages – are scattered throughout the city’s old quarters; narrow streets and monumental squares, busy shopping scenes and interesting sights. All of these and more make Lyon the perfect travel destination.

The bustling cultural life in the city is one of a kind, as is its gourmet culture. Lyon is the place which every foodie should visit at least once in their life. The numerous outdoor markets, the renowned Les Halles de Lyon indoor market, the bouchon restaurants that can be found only in Lyon, the typical specialties of the city …

… and then there is Paul Bocuse.

Paul Bocuse

Monsieur Paul

An absolute master of French cuisine, Monsieur Paul Bocuse was and will remain one of the most influential chefs who has transformed the gastronomical culture of Lyon (and the world, as a matter of fact) with his unique cooking style.

Born and raised in the suburbs of Lyon, humble to his last breath, Paul Bocuse has never strayed far from traditional cooking but instead combining it with a more contemporary presentation of the dishes. For him, high-quality fresh ingredients were the key for a good meal and happy diners.

Buttering up the world, Paul Bocuse has left an immense treasure of influence and contributions to the French cuisine and some of the best chefs in the world.

The Legend of The Truffle Soup V.G.E

Although the “Lion of Lyon” has left numerous immortal dishes behind his back as his boeuf bourguignon, pot-au-feu, coq au vin or sea bass in puff pastry, probably his most famous dish that will remain in history forever is the truffle soup V.G.E.

It was created as a tribute for the former president of France - Valéry Giscard d'Estaing – for a formal dinner at the Élysée and has remained the same for more than 40 years.

A real legend, the dish was inspired by the combination of two meals Bocuse has had in the winter of 1974-75 – a hearty vegetable soup and foie gras and truffles, covered by flaky puff pastry. Merging those two dishes, the famous chef created a culinary masterpiece that will remain in cookbooks forever.

Le Royal Lyon

Le Royal Hotel – a true Lyonnaise institution - boasts with its incredible interior design, an incredible work of the famous designer Pierre-Yves Rochon. The combination of modern and vintage styles creates a feeling of bourgeoisie –making a statement and keeping it intimate at the same time.

Breakfast seems to be the star of Le Royal Hotel. Styled like a country kitchen, the Côté Cuisine and its chef provide their guests with a real breakfast experience. Bacon and eggs prepared in front of you, fresh produce, home-made pastries and more are presented beautifully for the guests to try.  And for a gourmet lunch and dinner, L’Institut is the cooking school restaurant of the celebrated chef Paul Bocuse that welcomes the hotel’s guests for an exceptional dining experience.
